The Rubia Gallega (Galician Blonde) is an indigenous bovine breed from Galicia, in the northwest of Spain, internationally recognized for its exceptional gastronomic quality. It is mainly raised in Galicia, with 1,800 farms, and 23 more spread throughout the country. Originally they were subsistence farms, and over the last 20 years they have been evolving into a more modern type of farm, with new additions of ranchers.

They are fed on natural pastures, in some cases supplemented with cereals. This diet, along with free-range breeding, contributes to the quality and flavour of the meat, which also stands out for a juiciness that makes it highly valued in haute cuisine. The intramuscular fat is fine, white and melts during cooking, enhancing its natural flavours even when smoked or salt-cured.

To recognize its authenticity - and avoid fraud as its popularity increases - it is labelled both with the PGI of the Ministry of Agriculture of the Xunta de Galicia (Government of Galicia) and with the European Union recognition label.
