Wood-fired grill and dry ageing: two pillars that define us
While many steak restaurants in Barcelona cook with gas or charcoal, at Carnal we work exclusively with a wood-fired grill. Fire, smoke and ash give each piece a depth of flavour that no other technique can match. Our ageing fridge, visible from the dining room, houses pieces that mature from 45 to over 150 days, developing complex flavours and melt-in-the-mouth textures.
A menu for every tastebuds
Although meat is our heart, our menu spans much further. Among the starters, the beef steak tartare with confit egg yolk and the grilled bone marrow with Beluga caviar are dishes that set us apart. Vegetables shine with the grilled Montseny maitake mushroom and the sweet potato cooked for 12 hours in ash. And for those who prefer the sea, the grilled salmon with shiitakes and the Nikkei-style monkfish prove that fire also has plenty to say with fish. In meats, the range is extensive: from Argentine lomo alto and picanha to Japanese A5 Wagyu, as well as T-bones from Rubia Gallega, Simmental and Friesian with various ageing times.
Joaquín Sánchez: a chef with roots and fire
Behind Carnal stands Joaquín Ignacio Sánchez, a Uruguayan chef trained at the Basque Culinary Center who has worked in kitchens across Uruguay, Peru, the Basque Country and Catalonia before creating his own project. His roots in the River Plate asado tradition, combined with the technique acquired in some of Spain's finest kitchens, translate into a personal, coherent proposal with its own identity.

Carnal Steakhouse is located in one of Barcelona's most central and well-connected areas. Just a few minutes' walk from Passeig de Gràcia and Avinguda Diagonal, surrounded by boutiques, galleries and cultural landmarks. The nearest metro stops are Diagonal (L3, L5), Passeig de Gràcia (L2, L3, L4) and Universitat (L1, L2). We are open Sunday to Thursday from 1:00 pm to midnight, and Friday and Saturday from 1:00 pm to 1:00 am.
